Echiladas, Please

Seafood Enchiladas


In case you didn't know what was going on, the recent post about enchiladas was a testimony to my devotion to enchiladas of all sorts, even though the basic Tex Mex version was most prominent in that post. When I'm in Dallas (or the suburb of Carrollton, in this case), I can eat a slightly different version of Tex Mex every meal. Are seafood enchiladas with asparagus standard Tex Mex? Nope. They sure are good.

Agave Azul Car The place is called Agave Azul, and it's on the square in old downtown Carrollton.

The coconut shrimp may not be traditional Tex-Mex, either, but the mango-chipotle sauce served with them translated perfectly.  YUM!
